Paolo and Gionni Pruneti are the youngest, most dynamic and passionate duo making olive oil in Italy today. The family farm is located a few kilometers south of Florence in the heart of Chianti Classico and was established in the early 1800s. In addition to olive oil, they have historically produced saffron and iris for the perfume industry in France, but over the last 10 years the brothers have built a reputation of making some of the best olive oils in Tuscany and all of Italy. Their mill sits in the tiny village of San Paolo and is surrounded on all sides by steep hillsides which come alive with the colors of iris blossoms in the spring. They’re powerful and complex but made in a round and rich style that is so delicious you’ll want to drink it. The green grassy notes and green vegetable flavors are enveloped in rich apple and green banana fruit with a finish of black pepper and spice. The oils of this area and particularly the hills of Chianti Classico were the first to have a long standing reputation of being the best in Italy, the altitude and early fall forced early olive harvests which gave their oils the hallmark notes of grass, green vegetables, pepper and spice. The varieties Frantoio and Leccino are nearly perfect olive varieties for oil production with complexity and full bodied flavor.
