30% Calian, 30% Petit Ribiers, 40% blend of other varieties. Produced from entirely green olives harvested early. Color is deep gold with green edges. Delicious aromas of sage, asparagus, artichoke and green banana. The flavor is extremely fresh and tasty with the green vegetable and fruit flavors following through. Bitter and spicy notes are strong but balanced. Pour raw over grilled salmon and potato au gratin and bean soups. EU certified organic.
