Olivastra is a beautiful olive variety that produces one of the most elegant oils in Tuscany. 3,700 olive trees averaging 90 years in age, USDA certified organic. Our best selling Tuscan oil with great balance and concentration of flavor.  Green-gold color with rich aromatics of green tomato, olive and spice.  With an exotic creamy texture, it has great concentration.  The balance of pepper, herbs and lemon citrus is captivating.  Pour, dip or drizzle in accompaniment to your favorite dishes. 

Paniole was the first olive oil we started working with back in 1996, produced by the Ciacci family, owners of the great Brunello estate Mocali. In addition their incredible Brunello, Ales­sandria Ciacci makes a fantastic olive oil from several thousand trees on Mount Amiata. Most are of the Olivastra variety, which is a rare Tuscan olive that grows only in the valley south of Montalcino and around the base of Amiata. The more we learned about olive oil the more we realized just how special this variety is. Full of classic green Tuscan olive oil quality but wrapped in an elegance and balance rarely found in Frantoio and Moraiolo. Each time we visited in the early spring we would sit down for an hour long tasting of their wines, but before that we would always reach for the olive oil and pour it over the fresh ciabatta.
