Cinigiano, Tuscany

Paniole was the first olive oil we started working with back in 1996, produced by the Ciacci family, owners of the great Brunello estate Mocali. In addition their incredible Brunello, Ales­sandria Ciacci makes a fantastic olive oil from several thousand trees on Mount Amiata. Most are of the Olivastra variety, which is a rare Tuscan olive that grows only in the valley south of Montalcino and around the base of Amiata.
