For anyone who knows Giorgio Rivetti, they know if he’s going to make an olive oil it's going to be incredible. His trees are located in Casanova, about half way between Pisa and Siena. Frantoio, Moraiolo and Leccino olives are planted in high pH soils of the limestone found in western Tuscany. His oil is brilliant green gold with intense flavor. but elegant with low acidity and clear flavors. The olives are milled on site only hours after harvest to top quality. His idea was to make a small amount of great oil for the family and with the incredible demand, has now modestly grown to include a few importers in the US.See more
