For anyone who knows Giorgio Rivetti, they know if he’s going to make an olive oil it's going to be incredible. His trees are located in Casanova, about half way between Pisa and Siena. Frantoio, Moraiolo and Leccino olives are planted in high pH soils of the limestone found in western Tuscany.    His idea was to make a small amount of great oil for the family and with the incredible demand, has now modestly grown to include a few importers in the US.
